Sweetcorn Fritters

410g tin creamed sweetcorn

pinch salt

1 egg

4 tablespoons of self raising flour

oil and butter for frying

Add the sweetcorn, salt, whisked egg and flour and mix.

Add 2 teaspoons of butter and a splash of oil to the heated pan. Fry in spoonfuls not crowding the pan. Set aside the first batch on kitchen paper in the oven while you cook the remainder. Serve with salad.

Jacket Potatoes with Cheese

2 potatoes - fairly large

2 tablespoons grated tasty cheese

2 tablespoons sour cream 

salt and pepper

one small tin of baked beans

Always prick the potatoes in a few places  to stop them bursting open.

Place them in the oven at 180°C for an hour or until a sharp knife goes into the middle easily.

Cut in half and spoon the heated baked beans over the top of each half. Top with cheese and sour cream. 

The cooking process can be sped up by cooking the potatoes in the microwave on high for 3 mins before placing in the oven for approx 40mins. 

Tasty Toasted Wraps

1 packet of wraps

half cup of grated cheese

2 chopped mushrooms

2 pieces of chopped ham

Spread the cheese,ham and mushrooms between two tortillas. 

Heat a non stick pan and place the sandwiched wraps in a fairly hot pan and wait til toasted. Flip and cook the other side. Cut like a pizza.


2 eggs

1 tablespoon milk

salt and pepper

2 teaspoons butter

Left - over reheated roast vegetables can be added to the omelette before it is folded in half.

Beat the eggs and milk together lightly. Add salt and pepper. Heat a small non-stick pan and add the butter. When butter is foaming but not brown add the egg mixture. 

Using a wooden spoon pull the egg mixture to the centre of the pan letting uncooked egg run into the gap. Do not stir. Cook until all the egg set. Loosen from pan and fold in half.

Bacon and Egg Pie

6 strips bacon chopped

6 eggs

quarter cup milk

3 sheets already rolled flaky pastry

Seal or join pastry by slightly wetting the seam and slightly pressing together.

Use a tin about 20cms x 30cms.

Cut one sheet of pastry in half.  Line the bottom of the tin with one and a half sheets of pastry. Seal as described.

Scatter the chopped bacon evenly on top of the pastry base. Break the eggs evenly on top of the bacon.

Place one and a half sheets of pastry on top and seal. Cut 6 small slits in the top of the pie and brush lightly with milk.

Bake at 200° for 35 - 40 minutes.

Easy Small Pizzas

2 small wraps

2 thin slices of ham or salami

2 mushrooms - sliced (opt)

half cup grated cheese

very thin spread of tomato sauce( opt)

a few slices of onion(opt)

salt and pepper

Place the two wraps on a baking tray.

Top with ham and sliced mushrooms.

Add the cheese.

bake at 180°C for 10 minutes

Don't overload the little pizzas or put a topping on them that contains too much liquid eg: tomatoes or pineapple. 

Macaroni Cheese

1½ cups of macaroni elbows

¼ cup of flour

1 cup milk

1 packet cheese sauce or make from the recipe below

diced cooked bacon  - optional

extra cheese for topping

Cook the macaroni and cheese sauce according to the packet instructions.

Add cooked macaroni and the bacon to the cheese sauce.

Place in an ovenware dish and sprinkle extra grated cheese on the top. Bake at 180° for 20 minutes or until cheese is golden and heated through.

Easy Cheese or Curry Sauce

Good to know how to make. Can be the base of recipes such as Macaroni Cheese or can be changed to Curry Sauce instantly.

1 tablespoon butter

1 tablespoon plain flour

I cup milk

1 cup grated cheese

Melt butter in a microwave jug for 30 seconds.

Add flour and whisk. Slowly add milk while whisking. Cook 1 minute and whisk. Cook another minute and stir in cheese. Cook a further 30 secs or until mixture is thick.

For Curry Sauce add 1 - 2 teaspoons of curry powder when adding the flour

Fish Cakes with Curry Sauce

Cook frozen fish cakes according to

the packet instructions.

Make microwave curry sauce following details of cheese sauce in LUNCH section.

REPLACE the cheese with one heaped teaspoon of curry powder.

Add two chopped hard boiled eggs.

Serve with favourite frozen vegetables.

Corn on the Cob

Arrange two cobs of corn unshucked in the microwave.

Cook for 3 - 4 minutes on high.

Leave to cool a little. Remove the outer husk. Add butter and salt to taste.

Vegetable and Beef Soup

1 piece of shin on the bone

1 carrot

1 parsnip

1 onion

half tin crushed tomatoes

half a pumpkin

1 cup small orange lentils

1 - 2 slices of bacon

1 teaspoon of curry powder

Turn the crockpot onto high. Add lentils and beef. Chop the carrot, parsnip, onion and bacon into chunky pieces. Cut the pumpkin into four pieces. Add the vegetables to the crockpot, cover with boiling water and cook for 6 hours. Remove the pieces of pumpkin and cool. Take off the skin and put back into the soup. 

Break up the pumpkin and the shin meat. Season if required.

Easy Croutons

Chop 3 cups of stale bread or buns and put in a shallow baking tin. Sprinkle lightly with rice bran oil and season with a pinch or two of mixed herbs and a good grinding of salt. Mix well.


Bake until golden brown.

Pizza Subs

3 hamburger buns

1 tin spaghetti

half cup grated cheese

6 slices of salami or ham

Cut the hamburger buns in half horizontally.

Add ham or salami to each half. 

Distribute the spaghetti evenly between the buns and top with grated cheese.

Cook in a 180° oven for 15 minutes grilling for the last few minutes to brown the cheese.

Delux Tuna Sandwich

4 slices of bread

1 100 gm tin tuna

half a finely chopped red onion

1 tablespoon mayonnaise

1 tablespoon of vinegar

Drain the tuna and put into a small bowl. Add remaining ingredients. Spread on bread.

Curried Egg Sandwich

 Summer Salad Sandwich

4 slices of bread

sliced tomato,cucumber and spring onions

2 slices of ham

1 tablespoon mayonnaise

Lay the sliced salad vegetables on the ham and drizzle with mayonnaise. 

Must be eaten the moment it is made.

Delux Salmon Sandwich

4 slices of bread

2 nearly hard boiled eggs

1 teaspoon curry powder

1 tablespoon mayonnaise

Shell the eggs while they are still hot. Roughly chop them into a small bowl. Add remainder of ingredients and mix well. Spread on bread
