500gms mince

2 slices of bread

1 chopped onion

1 teaspoon of mixed herbs

2 tablespoons of tomato sauce

1 oil for frying

Corned Beef

1kg piece of corned beef

3 tablespoons vinegar

2 tablespoons brown sugar


Break the bread into small pieces. Put all the ingredients except the oil in a clean plastic bag and squish until well combined.

Form into 8 balls and flatten slightly.

Heat the pan, add the oil and fry rissoles until brown on each side. Place in the oven at 160°C for 30 mins to cook through.

Serve with mashed potato, a microwave packet of steamed vegetables and a store bought gravy.

Rinse the corned beef under running water. Add the vinegar and sugar to the crock-pot which has been turned to High.

Add corned beef and boiling water to half way up the meat. Cook for 6 hours or until tender.Serve with mashed potatoes, carrots and peas

Roast Vegetables

1 kumara

1 piece of pumpkin

1 carrot

3 mushrooms

1 capsicum

1 red onion

1 teaspoon mixed herbs ( optional)

selection of other seasonal vegetables such as asparagus or parsnip

Chicken, Couscous

& Vegetables

1 cup couscous

1 teaspoon butter

1 cup boiling water

roast vegetables left over from above

2 chicken thighs, diced

store bought crumb coating

fresh herbs - mint,oregano,basil

Stir Fried Vegetables

2 teaspoons oil

selection of brocolli, cauliflower, onion, capsicum, tinned baby corn, cabbage,spring onions and courgette

1 tsp crushed garlic from a jar

1 tsp crushed ginger from a jar

Sauce- 1 heaped tsp cornflour

             1 tablespoon soy sauce

mixed together with quarter cup water

Chop the kumara, pumpkin ( remove the skin), carrot and capsicum into cubes. Quarter the onion and keep the mushrooms in larger pieces.

Place the vegetables in a non -stick pan and sprinkle with 2 teaspoons of oil. Add salt. Bake at 180°C for an hour. 

Left over vegetables can be used in an omelette or with crumbed chicken and couscous.

Coat diced chicken in crumbs by tossing in plastic bag. Remove chicken from the bag leaving behind the excess crumbs, and fry until cooked in a non stick pan with a  little oil. Add the couscous to a microwave jug or bowl and add boiling water and butter. Cover with a large plate for 10 mins. 

Add fresh herbs to the couscous and stir in breaking up any lumps. Add chicken and vegetables.

Heat the oil in a frying pan and add the ginger and garlic. 

Add the broccoli and cauliflower cut into florets and the remainder of the veg sliced. Add the corn whole. Keep stirring the whole time to prevent the vegs sticking. Add a few tblsp of water to cook vegs until tender but crisp. Combine the sauce ingredients and add to the vegs to coat.

Serve on rice or noodles.

Heat the oil in a frying pan and add the garlic. Add the prawns. Cook gently, stirring constantly.

The prawn meat will turn pink when it is ready.

Do not overcook. Add a squeeze of lemon.

If adding to the stir fried vegs cook the prawns in a separate small pan.

Serve with noodles or rice.

Garlic Prawns - add to stir fried vegs

12 prawns - frozen and raw are tastier

1 tsp oil and 1 tsp butter combined

1 tsp crushed garlic from a jar

squeeze of lemon

Pork Spare Ribs

As many spare ribs as you can eat from the butchery dept of supermarket 

4 tablespoons Hoi Sin sauce - readily available in the supermarket and well worth investing in. Nice to add as an alternative to soy sauce in Stir Fried Vegetables

Line a large shallow baking tray with baking paper.

Lie the ribs in one layer on the paper and brush liberally with Hoi Sin sauce.

Bake at 180°C for three quarters of an hour or until a knife is very easily poked into the meaty area of the ribs. 

Serve with quick fried rice.

Savoury Mince on Toast

400gms of mince - will serve 2

1 onion

2 tsps beef stock or half a packet of instant soup - Hearty Oxtail

1 tsp Worcestershire sauce

pinch salt

1 tsp dried mixed herbs

1 tablespoon tomato sauce

Mince Sauce for Spaghetti Bolonaise

400gms of mince - will serve 2

1 onion

1 tsp beef stock

1 tsp soy sauce

half tin chopped tomatoes

half cup chopped mushrooms

small amount of chopped oregano or basil

Chicken Satay Wraps

1 packet of soft wraps

400 grams chicken thigh meat - diced

2 tablespoons of peanut butter

half a packet of Satay sauce mix

small amount of sliced lettuce and tomato

half cup water

oil for frying chicken

1 small pot of sour cream

Heat the oil in a frying pan and add chopped onion. Add the mince breaking it up into small pieces as it cooks and begins to go brown. Add remaining ingredients. Add one cup of water, turn down the heat and simmer for 20 mins.

Add 1 tsp cornflour to a quarter cup of water and mix. Add to the mince mixture to thicken. Serve on toast.

Heat the oil in a frying pan and add chopped onion. Add the mince breaking it up into small pieces as it cooks and begins to go brown. Add remaining ingredients. Add one cup of water, turn down the heat and simmer for 20 mins.

Add 1 tsp cornflour to a quarter cup of water and mix. Add to the mince mixture to thicken.

Serve with long spaghetti cooked according to the directions on the packet.

Heat the oil in a frying pan and add the chicken. Stir until nearly cooked. 

Make up half the packet of sauce as directed on the packet. Gently cook until sauce thickens.

Spoon the chicken mixture onto the wrap adding some lettuce and tomato.

Top with a small spoonful of sour cream and roll up.

Pork Nibbles

400 grams pork mince

1 teaspoon grated ginger from a jar

1 teaspoon garlic from a jar

1 teaspoon soy sauce

1 egg

half cup fresh bread torn into pieces

oil for frying 

Crumbed Chicken 

Cut 2 chicken thighs into cubes.

Put 4 -5 spoonfuls of store bought crumb coating mix into a clean plastic bag. Add chicken and toss. Remove the coated chicken leaving the excess crumbs in the bag. 

Fry in a little oil until fully cooked turning frequently. 

Tasty Chicken Nibbles

as many chicken nibbles as you can eat

one tablespoon Hoi Sin sauce

baking paper

( to test that chicken is thoroughly cooked  juices will run clear when a knife is inserted into the flesh).

Whitebait Fritters

1 packet frozen whitebait 250 gm

1 egg white

2 tablespoons self raising flour

oil and butter for frying 


1 lemon

(combining a tablespoon of oil and butter will prevent the butter burning)

Sausages in Gravy

4 real pork sausages

2 onions

1 tablespoon flour

1 heaped teaspoon beef stock

2 teaspoons oil

1 teaspoon Worcester sauce

( sausages can be left whole but I prefer to squeeze the meat out so you have 4 small patty sizes of meat per sausage.)

Fried Rice

I cup long grain rice

2 eggs

2 spring onions

1 tablespoon soy sauce

2 teaspoons grated ginger from a jar

2 teaspoons crushed garlic from a jar

1 grated carrot

half cup peas

tinned baby sweet corn

Smoked Fish in White Sauce

half a smoked fish

chopped parsley

1 tablespoon butter

1 heaped tablespoon flour

1 cup milk

Easy Chicken Casserole

2 chicken legs with thighs

1 chopped onion

2 rashers bacon - chopped

1 teaspoon dried mixed herbs

1 tablespoon soy sauce

2 teaspoons oil

3 chopped mushrooms

(to thicken if needed- add 2 teaspoon of cornflour to half cup water and mix.

Stir into hot casserole and return to the oven for 10 minutes).

Meat Loaf - good hot or cold

500 grams lean beef mince

3 pure pork sausages (remove skins)

1 onion finely chopped

2 teaspoons mixed herbs

2 slices bread broken up

1 egg

2 tablespoons tomato sauce

salt and pepper

Easy Cheesy Vegetables

A good way to use up odd vegetables

left in the fridge.

1 courgette

small piece pumpkin

1 potato or kumara

small section of broccoli or cauliflower

1 stray carrot

1 onion

Put mince, ginger, garlic, egg, breadcrumbs and soy sauce in a small clean plastic bag and squish together. Form into small sausage shapes. Fry until brown on all sides and transfer to an oven dish.

Place in a 150° oven for 20 - 30 mins until cooked through.

Add to a wrap with any salad ingredients or serve with mashed potato and greens.

Good hot or cold.

It is most important that the chicken be cooked until the juices run clear.Test by cutting the largest cube of chicken in half to make sure there are no sections that are under cooked.

These crumbed chicken pieces can be served with a simple salad, chopped roast vegetables or  rolled in a wrap with salad to which mayonnaise has been added. 

Place chicken nibbles in a large bowl or a large clean plastic bag.

Add the Hoi Sin sauce and toss around until all the nibbles have a thin covering of sauce.

Place the chicken in a single layer on the baking paper in an oven tray. Bake at 180°C for  45 minutes. Eat messily.

Thaw the whitebait and drain. 

Add the beaten egg white, salt and flour and combine gently. Do not over mix.

Heat the pan. When the butter and oil are hot add tablespoon fulls of whitebait mixture. Do not over crowd the pan.

Cook in two batches if necessary.

Serve with lemon.

Fry the onions gently until brown and soft about 10 mins. Push to one side and add sausage meat. Fry gently, about 10 minutes. 

Add the flour, Worcester sauce and beef stock which has been mixed with one cup of water.

Simmer gently until sausage meat is cooked through. 

Cook the rice in boiling water 15 -20 mins until taste test cooked. Spread on a tray and put in the fridge to cool.

Lightly beat eggs with  a tsp soy sauce and make a thin pancake in a small pan. Remove from pan and chop.

Heat oil in a larger pan and stir fry spring onions and carrot. Add cooked rice to heat through. Add peas and whole baby corn. Add cooked egg and soy sauce. Serve with chicken nibbles above.

In a saucepan melt the butter and blend in the flour stirring quickly. Remove from heat and gradually add the milk stirring to remove lumps. Return to heat and continue stirring til sauce thickens.

Add the flaked smoked fish and parsley and heat through.

Serve with mashed potatoes and peas or beans.

Fry the onions, bacon and chicken legs to brown. This gives the dish more flavour. Place the chicken legs into a casserole dish with a lid and add the onions, bacon, mushrooms, herbs, soy sauce and enough water to cover three quarter way up the ingredients.

Bake for two hours at 150°.

Thicken if necessary.

Tinned tomatoes can also be added to the mixture.

In a clean plastic bag combine all ingredients.

Squish and push around until all the ingredients are mixed well.

Turn the mixture from the bag into a loaf dish. Keep your hand in the bag pressing mixture evenly in the tin.

If the tin is too big push the loaf into only part of the tin. It will keep its shape.

Bake at 180° for an hour.

Serve hot or cold.

Peel and chop vegetables keeping them in fairly large pieces. Boil gently in salted water for 15 minutes.

Combine the vegetables and cheese sauce and put in an ovenproof dish.

Top with grated tasty cheese and heat through at 180° for 15 mins griling for the last 5 mins to brown the cheese.

Shepard's Pie

400 grams lamb mince

1 onion finely chopped

2 teaspoons dried thyme

2 tablespoons tomato sauce

1 tablespoon Worcestershire sauce

1 teaspoon of beef stock or Bisto

1 tablespoon cornflour

frozen mashed potato 

salt and pepper

Chop the onion and fry gently. Add the mince breaking up constantly as it cooks and turns a brown colour. Add the thyme, Worcestershire sauce, tomato sauce and seasonings. 

Add 1 cup water and simmer till all is cooked through about 20 minutes.

Mix the cornflour with about 2 tablespoons of water. Add to mixture and cook til thickened.  Put meat in a pie dish and top with mashed potato. Heat through at 180°. Grill potato if wished.

Sweet and Sour Pork

500gms pork pieces

1 teaspoon crushed garlic from a jar

1 teaspoon crushed ginger from a jar

1 sliced onion

225 g tin of pineapple pieces

2 tablespoons vinegar

2 tablespoons brown sugar

2 tablespoons oil

1 tablespoon cornflour

2 tablespoons soy sauce

Optional extras - tin of baby sweetcorn & chopped spring onion.

Heat oil in fry pan and brown onions and half the pork adding the garlic and ginger. Put in  a casserole dish and repeat with remainder of pork. To this mixture add the tin of pineapple plus juice, vinegar, sugar and optional vegetables. Barely cover with water and cook at 180°C for 2 hours. 

Remove from the oven. Mix together the soy sauce, cornflour and  1 tablespoon water. Add to mixture to thicken.

Serve with noodles or rice.

Homemade Hamburgers

one or two hamburger buns

good quality butcher department hamburger patties

slices of cheese

one small can of sliced beetroot

one tomato sliced


one onion

one egg

salad dressing and/or tomato sauce

Heat the oven to 150°. Cut the buns in half horizontally adding a slice of cheese to the tops.

Slice the onion and fry gently until soft and floppy. Push to one side of the pan and cook the patties.

Fry the patties gently. Put in the oven to finish cooking. Place the buns in the oven to crisp and melt the cheese. Add an egg to the pan and cook. Build the burger and enjoy.

Best Casserole or Stew 

3 slices of wiener schnitzel or thinly

cut beef

one onion - chopped

one carrot - chopped

one parsnip - chopped

one teaspoon Worcester Sauce

one teaspoon brown sugar

one squirt of tomato sauce

pinch salt

half packet instant Onion Soup

Heat the oven to 180°. Cut the beef into smallish pieces.

Fry the meat and onions to brown.

Put all ingredients into a casserole dish which holds 4 - 5 cups liquid.

Barely cover the contents with water. Cook for two hours or until meat and vegetables are tender. 

Thicken with one heaped teaspoon of cornflour mixed with a little water.
