





Scrambled Eggs
2 eggs
2 tablespoons milk
salt and pepper
1 teaspoon butter
1 slice bread
Porridge
1 third cup crushed rolled oats
one cup milk
pinch salt
Optional toppings - banana, kiwi fruit, brown sugar, honey or milk
Put the toast on to cook. Lightly whisk the eggs and milk in a bowl adding salt and pepper. In a small non-stick pan melt the butter. Pour in the egg. Using a wooden spoon pull the egg gently from the edge of the pan to the centre. Do not stir. The egg will be glistening and soft. Take off the heat until the toast is cooked.
Add the oats, milk and salt to a large microwave jug. Mix ingredients well.
Microwave on High for 2 mins. Different microwaves cook at different temperature so sometimes the porridge needs to be cooked for less time. This will be a matter of trial and error.
Berry Smoothie
1 cup milk
1 banana
half cup natural yoghurt
half cup frozen berries
Put all ingredients in a tall jug so nothing splashes out.
Use an electric stick blender to combine and break up the frozen berries.
Pour into a large glass and drink any time of the day.
Bircher Muesli
1 cup crushed rolled oats
half cup of coconut
apple juice
half cup natural yogurt
one apple
one teaspoon honey
Fruit Smoothie
half an orange peeled
half banana
4 strawberries
peach or nectarine peeled
half cup frozen berries
half cup fruit juice
a few raspberries or blueberries
Toasted Muesli
3 cups rolled oats
1 tablespoon brown sugar
1 tablespoon oil
1/2 cup coconut
1/2 cup sunflower seeds
I50 gm packet lightly salted
mixture of nuts
1/2 cup cranberries or apricots
pinch salt
Place the oats and coconut in a bowl or large measuring jug and just cover with apple juice. Mix together.
Cover with cling film and leave in the refrigerator overnight.
Next morning add the yogurt and grated apple. Mix thoroughly.
Serve with a drizzle of honey.
Place all the ingredients in a tall jug or plastic container so nothing splashes out.
Use an electric stick blender to whizz up all the ingredients.
Pour into a large glass and drink for breakfast, lunch or dinner.
Line a roasting pan with baking paper to stop the muesli sticking to the pan.
Place the oats, coconut, oil, sunflower seeds and nuts into the roasting pan and mix gently. Bake at 150° C for 20 - 30 mins stirring twice. Leave to cool.
Add cranberries and raisins. Store in an airtight container.
Serve with natural yogurt, chopped banana and a small smear of honey.
